2. How many cases do you make per vintage? 250

4. Who is your winemaker? Winemaker/Partners – Myself & David Sartain

5. What wine made you want to become a winemaker/start your own winery? David and I both make wines for other wineries in Paso Robles.  Due to the general hotness of the region, we do not get to make Pinot Noir and that is how Last Light was born.  We wanted to make vineyard designated Pinot Noir from unique coastal sites, hence the name Last Light.

6. What varietals do you work with? Pinot Noir and Chardonnay.

7. What vineyards do you source from? Derbyshire and Spanish Springs Vineyards. We are driven by sites that make expressive wines. These sites are very coastal, Derbyshire being the most coastal in the Central Coast, if not California. It’s very extreme farming and you can taste the intensity in the wines.


8. What type of oak treatment do you use? We use oak sparingly. The Chardonnay is all barrel fermented with 30% new French. The Pinot gets no new wood, but around 35% once-filled chardonnay barrels.  This adds subtle oak and allows the fruit and spice to remain in the front, while providing support and lift.

LastLightLabel9. What’s the story behind your name/label? Last Light is a burgundy label, and we focus on vineyards that are very coastal. These sites grab the ‘Last Light’ before the sun sinks in to the Pacific.

10. What do you love about small-lot winemaking? Anything you don’t like about it? I love how it allows you to be focused on all the little details.  I can meticulously hand sort 3 tons fruit!  I don’t like how inflexible you have to be. When making 6 barrek=ls of wine, they all have to be stellar! No barrel trials or barrel selections..!

11. Do you still have a day job? If so, do you mind sharing what it is? I am the winemaker for Pear Valley and David is the Facilities Manager for Paso Robles Wine Services and the winemaker for Sea Shell Cellars.
